Mediterranean Lentil Pizza

Mediterranean Lentil Pizza Ingredients:


  1. 1 tablespoon olive oil
  2. 1 medium flatbread or two small round ready-to-cook pizza crusts
  3. 3/4 cup Wholesome Crave Spicy Lentil Veggie Soup
  4. 1/4 cup sliced mini red and yellow peppers
  5. 1/2 cup cooked sliced mushrooms
  6. 1/2 cup sliced raw oyster mushrooms, torn into strips
  7. 1/4 cup sliced scallions
  8. 1/2 cup vegan feta cheese
  9. 1 tablespoon sriracha or another hot chili sauce


  1. Preheat oven to 425 degrees.
  2. Brush both sides of the pizza dough lightly with the olive oil, and place on a cookie sheet.
  3. Bake for about ten minutes, or until the pizza crust is lightly browned.
  4. Ladle the Spicy Lentil Veggie soup onto the pizza crust, then sprinkle liberally with the remaining ingredients, except for the chili sauce, making sure you have even coverage.
  5. Return to the oven and bake 8 to 10 minutes, or until the crust is nicely browned and the cheese is melted.
  6. Transfer to a warm serving platter and drizzle with the chili sauce.
